Fresh Home-Made Lemonade

This is a truly delightful and lemony lemonade concentrate that you can dilute to your preferred strength — as strong or as light as you like.
Ingredients:
8–10 juicy lemons (about 500 ml of juice)
200 g sugar
1.5–2 litres of still or sparkling water
Fresh mint (optional)
Instructions:
Squeeze the juice from the lemons and pour it into a pot. Add the sugar and stir thoroughly. Heat over medium heat until the mixture comes to boil. Stir occasionally until the sugar is dissolved. Simmer gently for 5–6 minutes, then remove the pot from the heat and let the mixture cool.
Once the lemon mixture has completely cooled, cover it and place it in the fridge. This lemonade concentrate keeps well in the refrigerator — although it will probably be gone in just a couple of days :)
To serve, pour a little of the lemonade concentrate into the bottom of a pitcher (about 1/5 to 1/4 of the pitcher’s volume). Add plenty of ice cubes, a handful of fresh mint sprigs or leaves, and top up with (sparkling) water.
