Fluffy Sour Milk Pancakes

This is the pancake recipe that my grandmother and great grandmother always used and the cakes taste so good.
Ingredients:
400–500 ml sour milk or kefir
1 large egg
180 g (3 dl) all-purpose flour
0.5 tsp baking soda
A pinch of salt
1 tbsp sugar
For frying:
Oil and butter
Instructions:
Break the egg into a bowl and whisk it. Then whisk in the sour milk/kefir. Add to the mixture the flour, salt, and baking soda, and quickly whisk the batter until smooth. If it seems too thick, add a bit more sour milk/kefir.
Heat a pan over medium heat. Fry the pancakes in butter on both sides until golden. Serve the pan cakes with berries and honey or jam.
Tips and recommendations:
Baking soda reacts with the buttermilk and makes the pancakes fluffy. That’s why the pancakes should be cooked immediately after mixing the batter — if the batter is made in advance, the pancakes won’t rise and become fluffy.
